What a busy week! My friend Mickey and I met in DAR and she moved a few years ago to South Carolina, and was going to be in Portland for a while, so we met for dinner at Tad's Chicken 'n Dumplins. It was fun to watch people floating down the Sandy River on inner tubes while we chatted away. I had a shrimp salad. I would have loved some fish and chips, but we've stayed away from fried foods for 2 months. I'm on a plateau right now as we transition from prepared lo-cal to home made fresh healthy food. But we are sticking with the healthy fresh food regimen!
Yesterday our Portland Chapter of the Daughters of the American Revolution (DAR) met for lunch at the Eastmoreland Golf Club. We are looking for a new place to hold our monthly luncheon meetings. Someone said.. "Look, a DEER!!" and I grabbed my camera and ran to the door to snap this photo. How cool is that?This will be our meeting room.. I love the soaring beamed ceiling, and the big windows with lots of light.

The building is very historic and beautiful. The course was laid out in 1917 and is one of the top rated public golf courses in the country.

After the meeting, where I'm happy to say we decided to move our meetings here for the next year.. I went swimming for my hour and then arrived home to this! Dayle had visited two local raspberry farms and picked a lot of yummy berries to make freezer jam with. Raspberries are very delicate, so fresh picked is the best.
Then he made the jam. Our grandchildren love our raspberry freezer jam! It's Dayle's favorite, too. We use Sure-Jell pectin, you just wash the berries, drain the water off, crush them with a potato masher, measure out the sugar into a bowl, stir the mashed berries into the sugar, add the pectin into a saucepan with some water and boil it for one minute, then stir that into the berries for 3 minutes and VOILA! it's done!
He even strained some seeds out of some especially for me. :-)
Our daughter and two granddaughters arrive late Tuesday evening. We will be busy over the next few days getting everything ready for their arrival. I'm so excited! Thanks for visiting.. do you have fun plans for the weekend? ((hugs)), Teresa :-)
